Impossible Pie
4 eggs
1/2 cup butter, melted
1 3/4 cups sugar
1/2 cup self rising flour
2 cups milk
1 tsp. vanilla flavoring
1 can (4 oz.) coconut
Beat eggs thoroughly with mixer. Add melted butter, sugar, flour, milk and vanilla. Beat again until well blended. Stir in coconut. Pour into two ungreased 8-inch pie pans*. Bake at 350 degrees for 30 to 35 minutes or until done. Cool and cut. Serves 12.
* Note: Do not use a pie crust. This mixture makes its own. It is rather thin when poured, but after baking, it cuts clean.
